So my husband and I have decided to go on a diet. A low carbohydrate diet. We really started yesterday, with grilled pork ribs and a salad, but since today is Saturday I decided to make something a little more special. I have done this low carb thing before and the weight loss was incredible. The only big hump to get over is the two first weeks in which your body just craves all kinds of fast carbohydrates like pasta bread and rice etc,- Once your over those 10 first days it's all worth it and you can find yourself saying no to sweets and white foods very easily. It's these first 10 days we will have to set our minds to firmly and stick to the plan. Since eliminating all carbohidrates is so hard at first I though we would start with something that would encourage us to try more vegetables and this was definitely a big positive hit. I made PIZZA, but just not any pizza, it's a cauliflower crust pizza- and you will not believe how it doesn't taste like cauliflower at all- The remaining ingredients to put on the top are equally as important as well. I decided to go with strong cheese, Asiago and some mozzarella for good melting. I caramelized onions and aded just a touch of bacon to pop the flavor of salt.Tomatoes and mushrooms for fun colors and after baking the crust I broiled the pizza again with all the toppings, this was incredibly good- I highly recommend it- It take a bit of time but as I read it you can make the dough ahead of time and keep it in the refrigerator for about a week. I would consider making a whole bunch of dough and freezing sealed tight, to save time on your next pizza. Here are some pictures- first the "ricing" of the cauliflower in the food processor. This is a new term for me, but it was not that dificult. I did it in small amounts because I have a small machine but the final product kind of looks like couscous. I found this recipie so delicious and really not that hard to make- if you can plan ahead for the second time. So now my dough is ready for next week and now I know something very heathy to make and looks just as the regular pizza, but I swear this one tastes so much better. I'm sharing some pictures of this pizza with you- Next time I will post some of my crafting work- I have a big event coming up so I have been pretty bussy making more stuff to sell- I need to have a full booth of products. and with this blog thing I need just to remember to take pictures and notes.

My first Pho soup

This was absolutely fabulous. I swear!. I made it today and my husband was so happy with it I'm making it again tomorrow.It's always so much easier the second time. And I didn't even use all the ingredients, I improvised and came up with my own version which I will share pictures here.
I did not want to buy more meat so I used beef ribs I had purchased on sale and had frozen. I did skim and clean the broth to remove all that yuck that came out when you first boil it ( I used a strainer, fast and easy)- BUT I did not rinse the meat I left it and used it later as a separate dish. I believe it brings more flavor leaving it there as it is. I pulled the ribs out when the soup was done, cut some small thin pieces for the soup and brushed the rest of them with the Hoisin and peanut butter sauce and then sprinkled some crushed peppers over it. It was fabulous!- sweet spicy and very juicy, and the meat came right of the bone because of all the boiling. I love the use of sugar in the soup it really completed the flavor and the mix of all the greens makes it so refreshing...oh, ! just perfect for a nippy spring day.! Just make it and you will see.
BIG TIP for gardeners: Don't discard the root ends of green onions, you can replant them in a shady spot and start growing your own very easily. Same with the bag of spices- use it in the compost pile even the cotton can be cut in smaller pieces and tossed with the compost. (I use cotton mesh)
